Last year, the 探花精选 in Greece hosted four 鈥渕aster classes鈥 in which refugees living in Lesvos taught and served their favourite recipe from home to residents of the island. Some of the refugees who took part talked to us about their experiences and shared the recipe of the dish they prepared for the group. Jacqueline shares her recipe for vegan Mahshi (vegetables stuffed with rice).

Jacqueline came to Greece two years ago with her brother to claim asylum. She now lives in Mavrovouni refugee camp on the island of Lesbos.

鈥淚 want to stay in Greece鈥, says Jacqueline, who is Kurdish and from Syria, 鈥渂ecause I feel like [I鈥檓 at] home here鈥.

Jacqueline is taking Greek classes organised by the 探花精选 twice a week. She was nervous about starting the language class. 鈥淎t first, I didn鈥檛 want to begin, I was afraid, but after some classes with Maria [her teacher], I felt really comfortable鈥.

As Jacqueline waits for a decision on her asylum claim, preparing food has brought her joy. 

鈥淚 want to be happy; this means cooking for other people鈥.

And her delicious meals have proved very popular.

鈥淚 cooked for people inside the camp in Moria and everyone loved the food, so word spread out for my cooking鈥, she says. 鈥淚 have since cooked for the management of the camp in Lesvos and NGO visitors.鈥

One of Jacqueline鈥檚 recipes is for Mahshi - a vegan meal made up of stuffed vegetables with rice. 

鈥淭his recipe is for special guests, when you want to spoil them and show a hospitality gesture! For us Kurds, the longer a dish gets to be ready, the more you show to your guests how you appreciate them鈥. 

Jacqueline, who lost her parents when she was young, taught herself how to make the dish.

She says she is like a mother in the camp: 鈥淚 cook for everyone who doesn鈥檛 know how to cook鈥.

It鈥檚 not easy for Jacqueline to prepare food in the camp鈥檚 鈥渃omplicated鈥 conditions, which include sharing a tent with four other people. 

鈥淚n the camp, I can only cook when there is electricity鈥, she explains.

鈥淟iving in a tent, I am adapting my cooking to two hours of electricity, and I have to prepare everything beforehand.鈥

But sharing meals can create a sense of community, Jacqueline says.

This recipe is part of our Recipes from Home series. These recipes have been shared by refugees who took part in the 探花精选鈥檚 cooking master classes held at Nan restaurant on the Island of Lesvos in Greece. The aim of the masterclasses is to bring together local and refugees, to promote common experiences and mutual understanding through the universal language of food.
